During conventional jam processing, the product must reach temperatures close to 90 °C before filling to guarantee proper pasteurization.

Microwave solution for jam processing
SAIREM engineers developed a continuous-flow microwave reactor designed to integrate directly into the jam processing line.
This system rapidly heats large quantities of jam just before filling, bringing the product temperature to 90 °C within seconds.
With this microwave solution:
- the cooking temperature can be reduced by approximately 20 °C
- pasteurization occurs immediately before packaging
- overheating of the fruit preserves is avoided
The reactor is capable of processing industrial production capacities, ranging from several hundred kilograms per hour to more than 15 tons per hour.
By integrating microwave technology into the jam processing system, our client significantly improved production efficiency while maintaining the premium quality of its fruit products.
